Warm up this cilly time of year with this simple cocktail and have yourselves a cool time with friends.

After an early unsupervised introduction to Bacardi Rum with a couple of pals and a bottle of diet coke to mix I really felt that this was not to be my poison! nor for both of my pals as one had been very ill in the house and the other was the child of the poor house owner.  However....it's wrong to make a snap judgement!

22 years later and in the context of a great cocktail such as a mojito I love it! (I still can't face diet coke though, ironic really!)

Mojitos

1 Highball Glass
Bacardi White Rum - 35 ml
Mint leaves
Lime slices
Gomme Syrup - 2 tbsp (Gomme Syrup will give you that professional edge, however if you have none in the pantry then just use lemonade instead of soda water)
Top up with soda water
1 white sugar cube
Ice cubes

In a highball glass place in your sugar cube first then add a couple of mint leaves, a slice of lime and 3-4 cubes of ice and repeat, lime, mint and ice to about 3/4 full
Pour Bacardi shot into glass along with Gomme syrup and carefully top up with soda.
add straw and drink,  Cheers!!
